Spoko is a pop-up restaurant and catering business combining Polish street food with international influence. Our mission is to recreate our favorite dishes from childhood with modern flair for the 21st century.
I grew up in a traditional Polish home in Chicago where each meal was cooked from scratch. My mom took it upon herself to cook for a family of six and there was never a shortage of variety at the dinner table.
Most importantly, no one ever left her house hungry. I still have memories as a kid, looking on as she rolled pierogi dough and filled cabbage leaves for golabki.
Since I've grown up and moved away, I realized how much I had taken her cooking and hospitality for granted. Supplied with acute nostalgia and over a decade of experience working in hospitality, I hope to share the same joy I experienced in childhood.
My goal is to bring homemade Polish cuisine to New England, combined with international flavors, so there is something for everyone to enjoy.
